Quick, easy and delicious! These baked chicken thighs with brussel sprouts and sweet potatoes is a healthy one pot meal sure to please your family!

Ingredients
- 4 Bone In Skin On Chicken Thighs
- 16 ounces brussel sprouts - halved
- 2 medium sweet potatoes, peeled and diced into 1" cubes
- 1 3/4 tsp kosher salt
- 1 tsp garlic powder
- 1 1/2 tsp dried rosemary
- salt and pepper to taste
Directions
- Preheat oven to 425°F. Coat a baking dish with oil.
- Place the sweet potatoes on one side and the brussel sprouts on the other.
- Spritz the vegetables with olive oil and season with salt and pepper.
- Season both sides of chicken with salt, garlic powder and rosemary.
- Place the chicken thighs on top of the vegetables, skin side down.
- Bake 30 minutes, set the chicken aside and stir the vegetables.
- Place the chicken back in the baking dish skin side up and cook until the chicken skin is browned and the vegetables are roasted and tender - about 30-35 minutes. Or, broil 2-3 minutes for crisper skin.
