Baked Chicken Thighs with Brussel Sprouts and Sweet Potatoes
Quick, easy and delicious! These baked chicken thighs with brussel sprouts and sweet potatoes is a healthy one pot meal sure to please your family!

Ingredients

  • 4 Bone In Skin On Chicken Thighs
  • 16 ounces brussel sprouts - halved
  • 2 medium sweet potatoes, peeled and diced into 1" cubes
  • 1 3/4 tsp kosher salt
  • 1 tsp garlic powder
  • 1 1/2 tsp dried rosemary
  • salt and pepper to taste

Directions

  1. Preheat oven to 425°F. Coat a baking dish with oil.
  2. Place the sweet potatoes on one side and the brussel sprouts on the other. 
  3. Spritz the vegetables with olive oil and season with salt and pepper.
  4. Season both sides of chicken with salt, garlic powder and rosemary.
  5. Place the chicken thighs on top of the vegetables, skin side down.
  6. Bake 30 minutes, set the chicken aside and stir the vegetables.
  7. Place the chicken back in the baking dish skin side up and cook until the chicken skin is browned and the vegetables are roasted and tender - about 30-35 minutes. Or, broil 2-3 minutes for crisper skin.
