Crockpot Garlic Parmesan Chicken Stew

This crockpot garlic chicken parmesan stew is a hearty and flavorful comfort food that is perfect for a chilly day. It features tender pieces of chicken, potatoes, and other vegetables all slow-cooked in a creamy, savory broth your family is sure to enjoy!

Ingredients
- 3 boneless skinless chicken breasts (cut into 1" pieces)
- 1 lb. little potatoes
- 1 rib celery
- 1/2 onion, finely chopped
- 3 carrots, thinly sliced
- 1 tsp minced garlic
- 1 tsp salt
- 1 tsp dried parsley
- 1 tsp dried thyme
- 2 cups chicken or vegetable broth
- 2/3 cup heavy cream
- 2 Tbsp corn starch
- 1/3 cup shredded parmesan cheese
- 1 tsp Italian seasoning
Directions
- Place the potatoes, carrots, celery, onion, garlic, salt, parsley, thyme and Italian seasoning into the crockpot and stir
- In a small bowl, whisk together the broth and cornstarch and add to the crockpot along with the cream.
- Add the chicken and press down slightly into the liquid.
- Cover and cook on low for 6-7 hours or until the potatoes are tender. If you want to reduce cook time, you can cut the potatoes into smaller cubes.
- Remove the chicken from the crockpot and chop or shred. Then stir it back into the crockpot with the parmesan, then taste and add seasonings to taste.
- Serve immediately and enjoy!
