Crockpot Garlic Parmesan Chicken Stew
This crockpot garlic chicken parmesan stew is a hearty and flavorful comfort food that is perfect for a chilly day. It features tender pieces of chicken, potatoes, and other vegetables all slow-cooked in a creamy, savory broth your family is sure to enjoy!

Ingredients

  • 3 boneless skinless chicken breasts (cut into 1" pieces)
  • 1 lb. little potatoes
  • 1 rib celery
  • 1/2 onion, finely chopped
  • 3 carrots, thinly sliced
  • 1 tsp minced garlic
  • 1 tsp salt
  • 1 tsp dried parsley
  • 1 tsp dried thyme
  • 2 cups chicken or vegetable broth
  • 2/3 cup heavy cream
  • 2 Tbsp corn starch
  • 1/3 cup shredded parmesan cheese
  • 1 tsp Italian seasoning

Directions

  1. Place the potatoes, carrots, celery, onion, garlic, salt, parsley, thyme and Italian seasoning into the crockpot and stir
  2. In a small bowl, whisk together the broth and cornstarch and add to the crockpot along with the cream.
  3. Add the chicken and press down slightly into the liquid.
  4. Cover and cook on low for 6-7 hours or until the potatoes are tender. If you want to reduce cook time, you can cut the potatoes into smaller cubes.
  5. Remove the chicken from the crockpot and chop or shred. Then stir it back into the crockpot with the parmesan, then taste and add seasonings to taste.
  6. Serve immediately and enjoy!
